Warm comfort food from a can that is good for you when you are in a hurry. This recipe for chili soup can also be served over rice or noodles. Using healthy chili like Hormel brand is a smart choice. Read the label on your can of chili to make sure that it contains only healthy ingredients.
Ingredients:
1 can of Hormel chili
1 can of kidney beans - drained and rinsed
1 can water (if used over rice or noodles you can use ¾ cup)
2 tablespoons red wine vinegar
1 teaspoon jalapeño pepper diced (about 2 small slices)
1 tablespoon Italian seasoning (mixture of oregano, basil, rosemary, parsley, garlic)
Directions:
Add all the ingredients to large sauce pan and cook until boiling. Turn down and simmer for about 5-10 minutes. Serve chili soup in bowl with a tiny sprinkle of cheese on top.
Options:
Use less water and serve as a chili sauce overtop of rice or noodles
Serve as a soup with bread sticks or tortilla chips
Toss in a handful of fresh spinach with rest of ingredients and cook till done
