Baby Zucchini Recipe

This recipe using fresh baby zucchini is fast, easy, healthy and full of flavor. This makes a delicious side disk or a meal, just make some rice and you have a 30 minute meal that is super easy and tasty. Zucchini nutrition facts: 3-1/2 ounces of zuchini has 28 calories, 200 mg potassium, 30 mg calcium, 25 mg phosphorus, .5 mg iron 16 mg vitamin C and .8 mg fiber.

Baked Baby Zucchini Recipe

Ingredients:
6 Baby zucchini
2 tbsp Olive oil or butter
1/4 tsp Cracked pepper
½ tsp Sea Salt (or regular salt)
½ tsp Garlic powder or garlic salt (if using garlic salt then omit the sea salt above)

Directions:
Spray Pam or smear cooking oil in bottom of glass oven safe dish (as shown in picture) or baking pan. Trim ends off of zucchini and slice lengthwise as shown in the picture. If using larger zuchini you'll have to slice twice so they wont be so thick. Arrange zucchini with cut side down in the baking pan. Drizzle olive oil over the top of the zucchini. Evenly scatter the pepper, salt and garlic on top of the zucchini. Cover pan with aluminum foil and place in oven for about 20-30 minutes at 350 degrees. Test the zucchini with a fork, if the fork slides in easy then it is done.

Quick Variation:
Microwave: This recipe can also be made in the microwave by using glass a dish and covering it with cling wrap. Place in microwave for about 7-10 minutes and test zucchini using the fork method.

Mircowave and Bake:
Sometimes when I'm in a hurry I put this in the microwave first then finish it off in the oven by removing the cling wrap, either way it's delicious and very healthy!

Options:
Before cooking toss in some:sliced mushrooms like portabellas, garlic slices or shallots.
