Healthy Stir Fry Recipe
This stirfry recipe is fast, easy, healthy and full of flavor. This makes a delicious meal, just make some rice and you have a 30 minute meal that is super easy and delicious. I cut the vegtables into small sticks so they would cook quicker and also for presentation. I also started the rice first so it would be done the same time as the vegtables. Most of the time is in the chopping of the vegtables so if you prefer you can chop them in the morning and put them in a bag in the fridge and they will be ready to toss in.
Healthy Stir Fry Recipe
Ingredients:
2 lg. garlic cloves, minced
2 carrots sliced
2 small zucchini sliced
6 mushrooms sliced
1/2 c. chopped green onions
1/4 c. soy sauce
1/4 c. water
1/4 c. honey
2 tbsp. vegetable oil
1 tbsp. Cornstarch
Directions:
Combine garlic, soy sauce, water, honey and cornstarch and set aside.
In large skillet, heat oil. Add vegetables and cook until vegetables are almost done then pour in the sauce from above; continue to cook and stir about 30 seconds until sauce thickens. Remove from heat to platter. Garnish with extra green onion. Serve with rice, if desired.
Options: Cook vegetables al dente for a crunchier taste.
Experiment with different vegtables such as celery, eggplant, asparagus
