Tomato Basil Recipe

This recipe takes about 35 minutes to make from scratch. If you prepare the vegetables and precook the pasta this meal can be cooked in 15 minutes. We grew 2 kinds of tomatoes and curly basil in our garden this year which are the 2 main ingredients in this healthy flavorful recipe. No matter if you use tomatoes from your garden or from the store this recipe uses the simplest ingredients to make a flavor that tastes so fresh, light and healthy.

Ingredients:
2 large tomatoes
1 cup fresh basil
1 large diced onion
3 cloves garlic sliced
2 tbsp Olive oil
2 cups water
Pasta - any type
½ tsp Sea Salt (or regular salt)

Directions:
Cook pasta in boiling water. Cut up tomatoes, basil, onion, and garlic. Add the olive oil to the skillet and turn the heat on to medium/high and toss in the onion and garlic. Once the onion has turned translucent add the tomato, basil, water and salt and continue to cook with a lid on the pan. Check on the pasta which should be cooked al dente. Drain pasta when it is done and set aside. Once the tomatoes are steamy and hot and are the desired consistency for your taste you can turn off the heat of the stove. Serve by putting a portion of pasta on the plate and drizzle a couple of spoonfuls of the tomato basil sauce over top of the pasta.

Quick Variation:
Cut up all of the vegetables beforehand and put them in the refrigerator just before you go to work in the morning and when you get home just put them in the pan and cook. You can also precook pasta and store it in the fridge for up to 2 days. When you want to use the precooked pasta just dunk it into boiling water until hot and presto it's done. If you use both the vegetable and pasta prep work beforehand the actual cooking time is about 15 minutes to a delicious meal.

Options:
Plate meal and grate large pieces of fresh parmesan cheese and sprinkle overtop dish.
