Steamed Whole Baby Carrot Recipe
This recipe using fresh baby carrots is fast, easy, healthy and full of flavor. This make a delicious side disk or a meal, just toss in some pasta and you have a 20 minute meal that is scrumptious.
Fast Easy Steamed Whole Baby Carrots Recipe
Ingredients:
Fresh baby Carrots
1 cup water
1 tbsp. butter
1 cup chicken broth or chicken stock
½ tsp. dill weed
2 tbsp. chopped parsley
Salt for taste is optional
Directions:
Put all the ingredients in a medium sauce pan. Put a lid on the pot and turn stove to medium high heat. Make sure the liquids do not go dry while you boil the carrots for between 3 - 8 minutes depending on thickness. Test the carrots frequently so they taste al dente, you don't want them to overcook.
Options:
Chop about 10 fresh pea pods in half and add them to the pan replacing the lid. Let them steam for the last couple of minutes.Prepare some kind of fancy pasta while the carrots are cooking and then drain the pasta. When the carrots and pea pods are done mix in the drained pasta and stir the carrot mixture to incorporate the pasta before serving.
